Nutty Bean Burgers
A healthy, hearty and nutty meat free alternative.
Serves 4
Preparation time 20 minutes
Cooking time 15 minutes
Ingredients:
* 3 tbsp sunflower oil
* ½ medium onion, finely chopped
* 1 clove garlic, crushed
* 100g day-old crusty bread (not sliced bread), crusts removed
* 50g mixed toasted nuts, chopped
* 1 roasted red pepper (from a jar is fine)
* 400g can mixed pulses, drained and rinsed
* 1 egg
* salt and black pepper
* 4 burger buns and salad, to serve
Preparation:
1. Heat 1 tbsp oil in a frying pan and gently fry the onion until just browned. Add the garlic, fry for 1 minute, then remove from the heat.
2. Place the bread in a food processor with the nuts and process until they make fi ne crumbs.
3. Add the red pepper, pulses, egg and seasoning. Blitz again until it makes a coarsely ground paste.
4. Using wet hands, shape into 4 burgers. Chill for 30 minutes. Heat the remaining oil and fry the burgers, turning often, for about 15 minutes until golden and crisp. Serve in buns with salad
